“We are battling an epidemic of sleep deprivation,” says Marie-Pierre St-Onge, Ph.D., a nutrition scientist at Columbia University. “While there are many reasons for our restless nights, my research has led me to conclude that our diets – what we eat, and what we don’t – play a major role.” In a large bowl, toss the pickled mushrooms with their brine, olive oil, scallions and coriander; set aside.
